Cauliflower and Chickpea Masala

Ingredients:
Spice mix
- garam masala (2 tbsp)
- cumin (1 tsp)
- turmeric (1 tbsp)
- smoked paprika (1 tbsp)
- pepper
Skillet
- yellow onion (2)
- garlic (4 gloves)
- ginger
- olive oil
- cauliflower (450g, frozen)
- chickpeas (2 cans, drained)
- tomato sauce (450g)
- water (1/2 cup)
- heavy cream (4 tbsp)
- salt
Steps:
- Create the spice mix in a bowl by combining the garam masala with the rest of the condiments
- Dice the onions (2), mince the garlic (4 gloves) and grate the ginger
- Heat some olive oil in a large skillet
- Sauté the onions (2), garlic (4 gloves) and ginger for some 3 minutes
- Add the spice mix to the skillet and mingle for 1 more minute
- Add the cauliflower (450g, frozen) and sauté for 5 more minutes, until the it is covered in spices and thawed
- Add the chickpeas (2 cans, drained)
- Add tomato sauce (450g)
- Stir and let the mix simmer for about 15 minutes
- Add some water, up to 1/2 cup, if it feels that the sauce is too dry
- When done, turn off the heat, mix the heavy cream (4 tbsp) and let rest
