Cauliflower and Chickpea Masala

Ingredients:

Spice mix

  • garam masala (2 tbsp)
  • cumin (1 tsp)
  • turmeric (1 tbsp)
  • smoked paprika (1 tbsp)
  • pepper

Skillet

  • yellow onion (2)
  • garlic (4 gloves)
  • ginger
  • olive oil
  • cauliflower (450g, frozen)
  • chickpeas (2 cans, drained)
  • tomato sauce (450g)
  • water (1/2 cup)
  • heavy cream (4 tbsp)
  • salt

Steps:

  1. Create the spice mix in a bowl by combining the garam masala with the rest of the condiments
  2. Dice the onions (2), mince the garlic (4 gloves) and grate the ginger
  3. Heat some olive oil in a large skillet
  4. Sauté the onions (2), garlic (4 gloves) and ginger for some 3 minutes
  5. Add the spice mix to the skillet and mingle for 1 more minute
  6. Add the cauliflower (450g, frozen) and sauté for 5 more minutes, until the it is covered in spices and thawed
  7. Add the chickpeas (2 cans, drained)
  8. Add tomato sauce (450g)
  9. Stir and let the mix simmer for about 15 minutes
  10. Add some water, up to 1/2 cup, if it feels that the sauce is too dry
  11. When done, turn off the heat, mix the heavy cream (4 tbsp) and let rest
